I hope you’re having a great long weekend! I’m relaxing by the lake this morning, so it’s safe to say that I’m enjoying my long weekend! : )
Today I’m sharing a yummy smoothie recipe with you! I absolutely love smoothies and make them pretty regularly, so I’m not sure why I haven’t shared any recipes with you yet! Today’s smoothie recipe is actually coming as a result of a recipe fail. I was testing a recipe that I was so pumped about, but it was a hot mess, to say the least. But it happens, so there’s nothing to fret over (although it did bum me out for a bit). Because the recipe failed, I had a ton of extra blueberries so I decided to make something I knew I’d love – a smoothie!
I hope you enjoy this blueberry muffin breakfast smoothie!
Ingredients:
- 1 c. blueberries, fresh or frozen
- 1 frozen banana, sliced
- 1 c. plant based milk
- 1/2 c. old-fashioned oats
- 1 scoop collagen powder (I used Tonic collagen)
- 1 tbsp. pure maple syrup
- 1 tsp. pure vanilla extract
- 1/2 tsp. ground cinnamon
Simply toss all ingredients in a blender and blend. For a thicker smoothie, use frozen blueberries and add ice. (The frozen blueberries will also give the smoothie a more vibrant purple color). Pour in your favorite smoothie cup and enjoy!
