Banana Bread Baked Oats

How have ya been?! I’ve been quite a bit busy, as classed just began today. I’m feeling fairly confident in this semester, but I hope it doesn’t take too much away from blogging (it’s my happy place, ya know?). Anyway, it finally feels like fall weather and I’m ready to get cozy!

It probably seems cliche, but fall is my favorite season without a doubt! From the cool weather and warm colors, to the festive activities and hearty meals, fall is one of the best times of the year! I may be jumping the gun a bit with creating fall recipes, but I just can’t help myself – the body craves, what the body craves.

Today I’m sharing a yummy banana bread baked oats recipe. A few days ago, I accidentally left my banana on the front seat of my car, and the sun turned it brown over the few hours I was at work. I didn’t want it to go to waste, and had the idea for these baked oats for a few weeks now, so I figured now was the best time to try them out!

This recipe is sweet and comforting, with the fall flavors of banana bread and cinnamon dancing on your tongue. It’s warm, soft insides reminds me of french toast, but with a thick, oaty texture. It’s absolutely scrumptious, and I hope you enjoy!

  1. Preheat the oven to 350 degrees. Lightly grease a ramekin or oven safe dish with coconut oil.
  2. Mash the banana until smooth.
  3. Beat together the banana, almond milk, egg, maple syrup, and vanilla extract.
  4. Add in the oats, chopped walnuts, baking powder, cinnamon, and salt, and mix.
  5. Pour the mixture into the greased dish, and bake for 15-20 minutes, or until the oatmeal is golden on top and slightly puffed.
  6. Allow to cool and enjoy!

  1. I made this today for breakfast because I had too bananas that needed used. I made a double batch since I had 2 bananas. It was delicious!!! Even my picky husband had a bowl because it was so good! Thanks for sharing!
