  1. Preheat the oven to 350 degrees. Lightly grease a ramekin or oven safe dish with coconut oil.
  2. Mash the banana until smooth.
  3. Beat together the banana, almond milk, egg, maple syrup, and vanilla extract.
  4. Add in the oats, chopped walnuts, baking powder, cinnamon, and salt, and mix.
  5. Pour the mixture into the greased dish, and bake for 15-20 minutes, or until the oatmeal is golden on top and slightly puffed.
  6. Allow to cool and enjoy!
