Healthy Pumpkin Spice Waffles

Hi friends!

I’ve never been more relieved and excited to be sharing a recipe with you. Today, I’m sharing a *healthy pumpkin spice waffle* recipe! A few weeks ago, I attempted to make these waffles, only to epically fail. I was so excited about the waffles, and may have had a little melt down when the recipe failed… But I have good news – I found the problem with the original recipe and made a new batch… and they turned out great! These waffles have a slightly firm/crispy outside, with a soft and moist inside. They’re so fluffy – it’s like biting into a pumpkin flavored cloud.

These waffles are delicious and packed full of delicious fall flavors! These waffles are grain free, dairy free, and refined-sugar free, and are absolutely tasty! Now that I finally figured out the recipe, I can’t wait to whip up batches of these yummy waffles all autumn long! I’m even planning on adapting this recipe to make other fall-flavored waffle creations! I hope you enjoy these yummy fall themed waffles!

Instructions
  1. Mix together all of the dry ingredients (almond flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt) until well incorporated.
  2. In a separate bowl, mix together the almond milk, egg yolks, pumpkin puree, maple syrup, and vanilla extract.
  3. Pour the dry ingredients into the wet ingredients. Stir well, then add in the coconut oil and combine again.
  4. In a separate bowl, beat the egg whites until they have forms stiff peaks. Gently fold into the waffle batter.
  5. Coat your waffle iron with coconut oil, and pour 1/2 cup of batter into the waffle iron. Close and cook for 3-4 minutes. Continue until all batter has been used.
  6. Gently remove the waffles from the iron and serve with your favorite toppings. Enjoy!
