It’s been a pretty busy week so far! I’m headed on vacation at the end of next week so I’ve been trying to get ahead on content so I can keep up! I also started my online nutrition coaching program this week so that’s been keeping me busy as well! I can’t wait to share what I learn with ya!
This week’s recipe is a fun one – because it’s bright freakin’ pink! I prepped a batch of roasted garlic beet hummus for you and it’s insane, you guys. I want to smother it on EVERYTHING! It’s so easy to make, just like all my favorite recipes, and I guarantee you’ll wow the crowds with it!
All you need is a handful of ingredients, a food processor or efficient blender, and five minutes! This recipe is perfect for a healthy snack to have on hand, or to take to some type of gathering!
Ingredients:
- 2 c. cooked beets (steamed or roasted)
- 1 can chickpeas, drained
- 1/4 c. tahini
- 2 tbsp. lemon juice
- 1 tsp. roasted garlic
- 1 tsp. sea salt
- 1/2 tsp. black pepper
- 1/2 tsp. thyme
Y’all. This is so easy – your minds are going to be blown. Simply throw all of the ingredients into a food processor or powerful blender and blend until all ingredients are combined and creamy. That’s it!
I drizzled a little rosemary-infused olive oil on top of mine just for a little extra flavor but that’s entirely optional! Serve this hummus with fresh veggies or your favorite chips, and refrigerate whatever you don’t use.
