Quinoa Sushi Bowl

Hello, friend!

One of my favorite things to eat is sushi. If I’m not blogging or working, you can probably find me at my favorite sushi restaurant with Josh, or browsing the sushi section of the grocery store. Of course, I had to come up with a way to enjoy sushi at home and on-the go, without dropping tons of money, or spending a ton of time trying to figure out how to roll sushi. So why not enjoy the fresh flavors of sushi in my favorite way to enjoy every meal – in a bowl.

Ingredients:

  • 1 c. cooked quinoa
  • 1/2 c. crab meat (you can also use tuna or smoked salmon)
  • 1/4 c. cucumber
  • 1/4 c. edamame
  • 1/4 c. shredded carrots
  • 1/2 avocado
  • A sprinkle of sesame seeds (I used the ‘Everything but the Bagel’ seasoning from Trader Joe’s
  • A dash of liquid aminos (or soy sauce)

Layer the ingredients however you like. I placed my quinoa in first, and then arranged the rest of the ingredients on top. It’s fairly quick and simple, just how I like it!

Enjoy this well rounded meal out of a bowl at home, or even out of a mason jar if you’re on the go!
