I’ve had a crazy sweet tooth lately but have been trying to focus on eating healthier meals made of real ingredients, ingredients that make your gut happy. I don’t believe in depriving myself so I decided it was time for me to create a healthy version of one of my favorite sweet treats. I had a lot of carrot pulp left over after juicing a ton of carrots so I decided to make some raw carrot cake bites!
These carrot cake bites taste delicious and they’re so easy to make! They’re full of vitamins and minerals, protein and good fats. A sweet treat that you can enjoy AND feel good about!
Ingredients:
- 1-1/2 c. shredded carrot (or carrot pulp)
- 1 c. almond flour
- 1/3 c. chopped walnuts
- 1/3 c. raisins
- 8-10 medjool dates, pitted
- 2 tsp. ground cinnamon
- 1 tsp. pure vanilla extract
Soak your dates in warm water for at least an hour until they become soft. Remove the pits. Add all of the ingredients into a food processor and pulse until combined. Roll into balls and chill.
