Chicken Flatbread Pizza with Cauliflower Sauce

I hope your week has gone well so far and only continues to get better from here! Today I have a yummy, healthier pizza recipe for you! Typically, I’m fairly picky when it comes to pizza. I mean, I’ll never turn down a slice, but I definitely have my preferences. White sauce is my absolute favorite sauce on a pizza, but all of the cream, butter and cheese that goes into these sauces usually makes my stomach ache. A few years ago, I made zucchini noodles with a cauliflower alfredo sauce, and thought it would be perfect as a replacement for the white sauce on a pizza.

I was originally planning on making these pizzas on a while grain pita, but as I was walking through my grocery store, they had a display with their newest items, and on that display were packages of Angelic Bakehouse Flatzza Crusts. It was almost like a spotlight was shining on the display, and I couldn’t help myself from grabbing a pack. These Flatzza crusts are sprouted, whole grain, non-GMO, dairy free, egg free, soy free, and high fructose corn syrup free. You guys know I’m all for inspecting ingredient lists on packaged foods, and there was no exception with these crusts. Anyway, enough of my raving. These pizzas hardly took any time at all to make, and they really hit the spot. Even though the ingredients are more nutritious than those of a standard pizza, it still tasted like an actual pizza! Thankfully, the Angelic Bakehouse crusts came in a pack of five, because I’m definitely craving these pizzas again! I hope you enjoy!

  1. Once you're cauliflower is steamed and very tender, add it to a food processor with the chicken broth, garlic, salt, and pepper. Blend until smooth and creamy.
  2. Store whatever sauce you don't use in an airtight container. Feel free to save it for more pizzas, or to use it as alfredo sauce on your favorite pasta. Get creative!
Chicken Flatbread Pizza
  1. Preheat your oven to 400 degrees. Place your flatbread crusts on a baking sheet or stone.
  2. Spread an even layer of the cauliflower sauce on the flatbread crust. Shred the chicken and add it on top of the sauce.
  3. Grate some fresh mozzarella cheese over the pizza. Top with fresh spinach and sun dried tomatoes.
  4. Put the pizza in the oven for 12-15 minutes, until the crust begins to crisp and the cheese melts. Remove from the oven, allow to cool, and slice. Enjoy!
