Healthy & Juicy Chicken Tenders with Homemade Honey Mustard

You know I love healthy recipes that require minimal effort and ingredients – and today’s recipe meets both of those criteria! For both the chicken tenders and the honey mustard, you only need a handful of ingredients, and you’ll spend more time dreaming about these juicy chicken tenders than actually making them! I’m not joking when I say that the hardest part of the recipe will be to not eat your crackers before you turn them into your crust. I picked up a box of Simple Mills Tomato & Basil Almond Flour Crackers and had such a hard time not munching on them!

Chicken is usually my protein of choice when it comes to most meals but lately, I’ve been getting tired of the same old grilled chicken. You can only switch up your seasonings so many times before your taste buds crave something different. This meal was not only delicious, but it brought me back to my childhood as well. Whenever my family went out to lunch or dinner somewhere, I always ordered the chicken tenders.

This recipe is perfect for families looking for a healthier take on their favorite dishes, and anyone just looking to switch things up! As I mentioned before, I used Simple Mills Almond Flour Crackers, but you can experiment with your favorite whole grain or seed crackers! I’ve also tried this recipe with Luke’s Organic crackers and a few other cracker brands. It comes out perfect every single time! Healthy & Juicy Chicken Tenders
  1. Preheat your oven to 375 degrees. Spray a baking sheet with olive oil or avocado oil.
  2. If your chicken is not already cut into chicken tenders, cut your chicken breast into chicken tender-like strips.
  3. Add your whole grain crackers into a food processor and blend until your crackers become a fine powder. Pour into a wide, shallow dish.
  4. Beat the 2 eggs in a wide, shallow dish until the yolks and whites are evenly combined.
  5. Dip each chicken tender in the egg, and then into the cracker crumbs, making sure to evenly coat each chicken tender. Place on the cookie sheet.
  6. Bake the chicken tenders for 35-40 minutes, making sure to flip halfway through. Remove from the oven, allow to slightly cool, and enjoy with your favorite dipping sauce!
Homemade Honey Mustard
  1. Mix together the raw honey and the plain yellow mustard until evenly combined. It may be a tad runny, so refrigerate if you would like it a bit thicker. Enjoy!
